| Production Notes: | After crush and before fermentation, Joel and the Ravenswood winemaking team often drain off the liquid from the must to create deeper, darker wines. This technique is called saignée French for “bleeding.” Instead of selling the runoff to other wineries, a few years back Joel decided to use it to make a dry rosé. |
