| Production Notes: | Making good wine is always a challenge. Throw in night time harvesting in below freezing temperatures, winemaking in the extreme cold, low yields and tricky fermentation and you get extreme winemaking. This is Canadian Icewine. To make Icewine, grapes are subjected to repeated freezing and thawing, thereby concentrating the juice to produce intense flavors and complexity. Once picked, the frozen grapes are pressed and only a few drops of sweet juice is obtained. This juice is then fermented very slowly for several months. In all Icewine, the balance of acidity and high sugar content yields an extraordinary and unique wine with intense and lively flavors unlike any other sweet dessert wine available.
