| Production Notes: | Hand-harvested, Riserva Ducale starts with a careful selection of the best grapes. Characterized by a warm and sunny September that produced well-ripened grapes, the 2004 vintage was a very good year for Sangiovese in Chianti Classico. Picking began in mid-September and ended mid-October. Alcoholic fermentation, aided by racking and punching down, took place in stainless-steel vats at a controlled temperature of 82.4°F for 10 days. Maceration on the skins continued for another 14 days. After completing malolactic fermentation, Riserva Ducale was aged in stainless steel tanks for a brief period and then in 1,056–2,113 gallon (40-80 hl) oak casks for approximately 24 months. After bottling, the wine rested a minimum of three months before release. |
